Seven Salads in 7 Days

This week let’s take our veggie game to the another level by eating a salad…EVERY DAY!

It’s a great (and easy) way to get more fiber (aiming for 25 grams in a day), and your body will thank you for the wide variety of nutrients you are adding into your diet. Fiber helps prevent colon diseases and constipation too!

Salad’s are anything but boring, and the choices are endless. Add nuts, avocado, seeds – try different gourmet oils and vinegars in your dressings (this is where I shop: Toss on fresh berries or pear slices, and different clean meats.

Think texture for your taste buds- salty and crunchy nuts with chewy dried slightly tart and sweet cranberries make me a happy girl! For busy peeps- Costco has a mixture that is fabulous for this! For an flavorful robust combo add pepperoni, sundried tomatoes and banana peppers.

Now, you don’t have to have a salad as an entree every day… a simple side salad will do!

Personally, my all-time favorite salad is roasted vegetables with some crushed pistachios and a bit of crumbled goat cheese. How do I get it made with my crazy schedule? Sunday afternoon I cut up all veggies- usually 2 different color peppers, zucchini, summer squash, broccoli, asparagus, onions etc. Now here’s the life saver: Newman’s Own Olive Oil and Vinegar Salad Dressing. I throw all of the veggies in a zip lock bag, pour a generous amount of dressing on them and marinate for a couple hours, or heck overnight if you want. Roast at 425 until they are done to your liking. Chill them and use on your salad (or as a side dish). Top with crushed pistachios and some crumbled goat cheese! It is DELISH!

The joy is that I make this Sunday, and the veggies last till at least Wednesday. So delicious!
